Veg Samosas


This is the 3rd post for BM#28 under Samosas with different filling.
This is a very simple Samosa recipe. I have used self raising flour instead of plain flour in this recipe. Self Raising flour made the coating really fluffy. It was very crispy from out & soft/ fluffy inside.  You can add in more vegetables if you want. I just added potatoes & Peas. I am feeling very guilty after eating Samosas for the last 2 days. I now need to swim for longer duration to get rid of all those extra fat that I have put on in the last few days.


Makes: 10 medium size samosas

Ingredients:
For the filling:
  • 2 Potatoes boiled
  • 1/4 cup green peas Boiled
  • 1 onions sliced
  • 1 Tbsp ginger garlic paste
  • 1/4 Tspn turmeric powder
  • 1 Tspn chili powder
  • 1/2 Tspn garam masala
  • 1/4 Tspn chat masala powder
  • Pinch of Amchoor powder
  • salt as per taste
  • Coriander leaves to garnish
  • 1 Tbsp Oil
  • Oil for deep frying
For the dough
  • 3 cups plain flour
  • 1/2 tspn cumin seeds
  • 1/4 tspn Ajwain seeds
  • salt as per taste
  • 2 Tbsp oil
  • 1/4 cup of water
Method:
  1. Make a soft dough (Like Chapathi) with all the ingredients mentioned in the dough list. Cover this at let it rest for 20 mins
  2. In a Pan add a Tbsp of oil, fry ginger garlic, onion until translucent.
  3. To it add in all the masalas & fry for a minute.
  4. Now mix in the boiled potatoes, green peas into the masala & give it a good mix. Also try & mash it a little.
  5. Finally Garnish the stuffing with chopped coriander leaves. Allow the stuffing to cool down
  6. Unwrap the soft dough. Sprinkle little flour and knead again for a minute.
  7. Divide the dough into 6 small balls, Dust it with flour & roll it to flat disc with a help of rolling pin.
  8. Now cut it two equal halves & take one of the sides, make it into a cone shape.
  9. Seal the edges with some water. Fill the cones with the stuffing & seal them again with some water.
  10. Heat oil in a deep frying pan & deep fry these samosas for about 2 - 3 mins. Make sure you deep fry them for 1 minutes on low flame, 1 minute on medium flame & 1 minute on high flame. Keep turning them while they are frying.

Samosa with Chola Filling





This is my 2nd post for BM#28 under Samosas with different filling.

I have already mentioned in my previous post that I made 3 different filling samosas in one day. Well for the breakfast it was egg & chola samosa. I had some left over chola masala from previous nights dinner so thought will use these stuffing. Cholas also falls under chats category & we all know that will be definitely go well with the samosa. We had a very filling breakfast with these 2 varieties of samosas. This is how I made it.


Ingredients
Chola masala
  • 2 cup Chola/ Chick peas(Soaked in water overnight)
  • 1 tomatoes chopped
  • 1 onions chopped
  • 1 tbsp ginger garlic paste
  • 1.5 Tbsp Everest chole Masala
  • 1 Tbso oil
  • salt as per taste
  • 1 Tbsp lemon juice
  • Coriander leaves to garnish
For the Samosas
  • 3 cups plain flour
  • 1/2 tspn cumin seeds
  • 1/4 tspn Ajwain seeds
  • salt as per taste
  • 2 Tbsp oil
  • 1/4 cup of water
  • Oil for deep frying
Method:
  1. In a pressure cooker cook the cholas with 2 cups of water until its cooked & is soft. (Around 5- 8 mins)
  2. In a kadai/ pan add oil fry onions, ginger garlic until translucent
  3. Now add in chopped tomatoes, chole masala & fry thill until fat separation or the tomatoes are fully soft
  4. Now add in the cooked cholas (Chick peas) in to this & cook it on low flame until all water is drained off.
  5. Add in the chopped coriander leaves & lemon juice. The chole masala is ready

Note:
 
Since I made the stuffing with left over chole, I had to fry the cholas again to make sure that I remove any excess moisture from the gravy.

Egg Samosa


This is my first post under Samosas with different filling for BM#28

Tell me who doe snot like Samosas. These little parcels are world famous now. Go to any parties or restaurants you will find these in their Appetiser menus. These days for convenience people just use the phillo pastry sheet to make quick samosas. Mostly Onion Samosas are made with these & phillo pastry sheet really make the samosas crunchy. I mostly avoid making deep fried items at home for us. I mostly do them when I have guests at home. My hubby loves samosas & that's why I though I will take up this theme Samosas with different filling.

when it comes to breakfast its mainly different varieties of Dosas without oil/ ghee, Oats idlis, Bread/egg, Idlis, Chapathi, Puttu, Appams. I rarely make Puris for breakfast & Its made may be once in 2 months or so. I made these Samosas yesterday for breakfast & also for evening Tea. I made 3 different filling samosas in one day. One of My friends also had come home in the evening so thought it will be nice to serve some of these. This is how I made them

  5. Now mix in the boiled potatoes into the masala & give it a good mix. Also try & mash it a little.
  6. Now fold in the eggs in this turn off the flame.
