Baby Sannas with Vada


Sannas is  a soft Idli which is widely made in Mangalore & Goa. Sannas are made with either Toddy or yeast. Back home my mother makes this with Toddy as its easily available in my home town. Vadas are southindian breakfast snacks. Idli Vadas are commonly available in all the Indian hotels. Since I dont like Idli I make Sannas with Vada. You will have to make Sambar or Chtney to go with this Dish. May be I will post recipe for Sambar when i make it the next time.

For Sannas
1big cup Dosa/Idli Rice (You can use Basmati Rice as well)
1/2 cup grated coconut or thick coconut milk
1/4 tspn instant yeast (dissolve in Luke warm water along with 1tbspn of sugar & allow it to rise for 10 mins)
1/2 tspn salt

Soak Rice for 5 to 6 hours in water. Grind rice & coconut to a thick batter (like dosa batter) Add in yeast & salt mix well and leave it for 7 to 8 hours to ferment. sometimes the batter will spill over so make sure you keep the batter in a large pan. Grease the cups or plate with some oil, pour in the batter & steam for 5 to 10 mins.

For Vadas
1 cup Urad Dhal(Soak in water for 4 to 5 hours) and grind to a semi smooth paste (don't add water. add very little if required)
1 tspn finely chopped Ginger
1 finely chopped small size onion
1 finely chopped green chili
4 to 6 chopped curry leaves
2 tbspn finely chopped coconut
Salt as per taste

Add the above ingredients to ground Urad Dhal & mix it well. Heat Oil in a pan, take small size batter with greased hands (or wet hands) make a shape of doughnut & immediately drop it in hot oil. Fry for few minutes till golden brown on medium heat. You can also make round Vadas. Just use a tablespoon pick the batter and drop it in the oil.
