Mango Ice Cream

Ice Cream is my hubby's & in-laws favorite dessert. when my in-laws are here we buy a big tub of Ice cream & keep. Everyone in the house becomes a small child in front of this tub:) there will be fights between them for having a bigger share. well I am not part of this, as I am not very fond of Ice Creams. I can eat ice cream only with brownie or rich chocolate cake. I have been wanting to make home made ice cream from a long time & finally made it yesterday. This is very easy to make & I never knew that until yesterday. This ice cream is very rich, creamy & very very tasty. I had 1 scoop with fresh cut mangoes & it was very tasty & refreshing. Its a Mango season & the best time to make it this summer.

Ingredients
2 cups whipping cream (500 gms)
1 Tin Milk Maid
4 Tbsp Powdered Sugar
1 cup Mango Pulp ( I used 2 fresh mangoes & pureed it in the mixer)
1 Tbsp Lime juice
1 Tsp Mango Essence

Method

Whip the cream with the electric mixer for about 5 to 8 mins till it becomes thick. Now add in the rest of the ingredients & mix it with a spoon or a whip. Put this mixture in a closed plastic container & freeze it. After 2 hours remove from the freezer just mix it again with a spoon & put it back in the fridge. Ice cream will be ready in another 2 hours.

Note: This will serve about 10 - 12 people. I have stored them in a big tub & It might weigh about 2 kgs I guess.
Happy cooking & Eating
