Carrot Halwa



Carrots are one of  Zion's fav veggies.  I made this Carrot pudding also called (halwa in India) last week. He loved it so much that he was asking for more & more. You can actually make in big batch & refrigerate it. I also gave this pudding along with dosa & chapati the next & following day. This is a very rich dessert. Very tasty, rich & healthy for your lill one. Its very easy to make & doesn't require much time to make it. This is how I made this.

Ingredients:
  • 2 cups of grated carrots
  • 1/2 Tin Milkmaid (condensed milk)
  • 2 - 3 tbsp sugar
  • 1/4 Tspn cardamom powder
  • 3 tbsp of chopped cashew nuts
  • 1 cup of milk
  • 3 tbsp ghee or butter
  • Pinch of salt
Method:
In a pan add in ghee & fry the cashew nuts until light brown. Now add in grated carrots, milk, sugar & cook this until the carrots are half done. Now add in condensed milk in the carrot mixture & mix it well. Now cook this on low flame until the carrots are done & the pudding becomes a lill sticky. Add more ghee or milk of required. The carrot pudding is ready.

Note:
  • If you want you can add in more milk & make it a lill think consistency.
  • You can actually make this with potatoes, beetroot & bottlegaurd.
