Pumpkin Celery Soup



This is my 3rd post for BM 26 under soups & salads. I am not a a person who loves soups. I rarely  make soups at home & when we eat out I don't think I have ever ordered soup:). We rarely eat out but when we do, I already would have prepared myself to have a nice food. Soups kind of fills my stomach, after that I feel full & eat very less. So I feel soups will be definitely a good option for me if I am seriously thinking of loosing weight:)

Well yesterday was my Son's first day in School. He is just 21 months & is the youngest in his class. The first 2 days one parent is allowed to sit in the class & watch what the kids do. Zion is a very bold & loud kid. He was not afraid of anyone at all. He was acting like a leader in the class. I loved his behaviour but only concern was he is so restless, always on his toes. Today is the 2nd day & I hope he will be fine today too.  The last 2 days have been really a busy one & on top of that I am not feeling well:(. Coming back to the soup recipe, I made this last week & it was good. This is how I made it.

Ingredients:

1 Cup chopped yellow sweet pumpkin
4  tbsp of chopped celery stem
1 chicken cube
1 Tbspn soya sauce
1 Tspn Garlic pieces
1/4 tspn black pepper powder
1 tbspn oil
4 cups of water
salt as per taste

Method:
In a pressure cooker add oil, fry garlic, celery, pumpkin for about 3 to 5 mins. Add in chicken cube, salt, pepper, soya sauce, 4 cups of water. Pressure cook this until 1 or 2 whistles. Once the cooker is cooled, remove the mixture & puree it in the mixer or blender. Boil this again in a pan & adjust the consistency by adding more water or according to your taste. after boiling if you see any forth on the top surface, just scoop it off with the spoon & throw them away. Well if you want it rich you can add fresh cream or coconut cream in the soup. The soup is ready to serve.
