Apple & lettuce Salad



I love Lettuce & this was the salad that I made last week. This also my 2nd post for BM 26. Since my hubby is not a great fan of lettuce. I mostly make any lettuce based recipes in small quantities. I have actually added many small ingredients in this salad. I mostly don't decide on any fixed recipe. I just get into the kitchen, open the fridge door & than start picking up what all I feel like adding. Since I had some apples lying in the fridge I though will marry her with lettuce & make something. This salad needs to be eaten fresh or else it will get soggy.

Ingredients:

1 big Cup lettuce chopped
1/4 Cup boiled corn
1/4 cup grated apple
8 to 10 roasted Almonds
3 green olives chopped
1 tbsp lemon juice
1 Tbsp olive oil
1 Tbsp yogurt
1 Tbsp cream cheese
salt as per taste
1/4 tspn pepper powder

Method:

Make a dressing out of lemon juice, cream cheese, olive oil, yogurt. salt & pepper. Now mix in rest of the veggies into this dressing. Garnish the salad with Almonds & just toss it.

Note
  • keep all the chopped vegetables & apples in the refrigerate until its cold & crisp.
  • This salad taste good fresh. I had some leftover salad the next day, it was so soggy & tasted bad.
