Vanilla Ice cream

 After Marriage definitely your taste & interest in life changes. My hubby loves ice cream & his entire family is crazy about ice creams. I am more of a cake person & never had much interest for ice creams. Well I could eat them only with Brownie. My Man can have ice creams any time of the day/ night. Way back in India my hubby & me were working in the same company. Later on I moved to Mcafee & fortunately we still remained in the same campus.We used to meet each other at least twice in a day in the food court. That time we were seeing each other & not married:) The food court had a small Baskin Robbins ice cream outlet & my hubby used to pick up his fav honey nut crunch ice cream, while I picked up my fav chocolate chip muffin from a bake shop. I Slowly started tasting honey nut crunch & got addicted to it. From then on... all his bad eating habits like, nibbling on peanuts, chocolates, chips, ice cream became my habits too:(.

I have made egg less Mango ice cream & butterscotch in the past several times. This time I thought of trying out plain simple Vanilla with eggs. I must confess that this is the best ice cream I have ever tasted & made. Well we had this with caramelised Bananas, Martini soaked black currants & nuts. My lill one also enjoyed the ice cream:). My hubby as usual was so impatient & had started eating it even before it was set. Well I have decided not to make this more often, coz my hubby kept visiting the kitchen  every 2 hours to have some. We definitely don't want to become obese & sick. So everything in moderation is good. But that principle is applied very rarely at my place. This is how I made the ice cream.


Can Make: 8 Big Scoops
Making cost: $10 SGD

Ingredients:
  • 2 cups heavy whipping cream
  • 3 egg yolks
  • 1/2 tin Condensed Milk
  • 1/4 Tspn salt
  • 1 Vanilla Bean or 2 Tbsp Vanilla essence
  • 2 Tbsp sugar
  • 1 Cup milk
Method:
  1. In a medium saucepan, combine milk, sugar & Vanilla bean over medium heat, and bring to a simmer.
  2. Meanwhile, in a medium bowl, whisk egg yolks until well combined.
  3. While whisking egg mixture constantly, slowly add 1/4 cup of the heated milk to the egg mixture. Strain this mixture into milk remaining in saucepan.
  4. Continue cooking over medium heat, whisking constantly, until mixture comes to a full boil, 4 to 6 minutes.
  5. Now set this aside to cool or put it in the refrigerator.
  6. In a mixing bowl whip the cream to soft peaks.
  7. Combine Milkmaid / Condensed milk into the whipped cream & continue to whip it until well combined.
  8. Finally combine the cooled custard to this mixture & mix well.
  9. Freeze this for 2 hours, remove & whip it again with the electric beater for 2 minutes. Continue this process 2 times after every 2 hours.
  10. Now let this ice cream set in the freezer for at least 6 to 8 hours or until set completely.

Note:
  • For Caramalised Bananas, cut the Banana into half & shallow fry in a Pan with 1 tbspn of Butter. Sprinckle some sugar on top of them & let them fry in there for 2 mins or until they are caramalised.
  • You can add in any topping sof your choice to the Ice cream.
  • If you are a vegetarian you can replace the eggs with ready made custard powder or some corn flour.
