Kesari Bath



The weather here is getting better & this week we see sunshine everyday. It feels good to see the Sun after a long time. However the fluctuating weather has made all of us sick. Zion is home this week as he is down with fever. When he is home, I cant do anything. He is full time around me & doesn't let me do anything.

Today I will be sharing Kesari Bath Recipe. This is one easy Indian sweet recipe. When I crave for Indian Ghee sweets, this is the one I make it as it can be done is less than 30 minutes. It was Pongal 2 weeks ago & I decided to celebrate it at home by making the traditional South Indian Tamil food. I made Khara Pongal, Medu Vada, sambar, chutney & Kesari Bath. Since my friend was getting Sweet Pongal, I decided to make Kesari Bath for sweet instead. It is also called as Rava Kesari, Suji ka Halwa in Hindi. This sweet is made in all parts of India & is given different names. There are also different recipes for this but this is how I make it & is the best.


Serves: 5 people
Making time: 30 minutes


Ingredients:
  • 1 cup Semolina
  • 1 cup sugar
  • 1/4 cup Ghee (Clarified Butter)
  • 1/4 tspn Elachi powder
  • 1 tspn Orange color
  • 2.5 cups water
  • 1/4 tspn Salt
  • Handful of chopped cashew nuts or Almonds

Method:
  1. Dry roast semolina on medium flame for about 3 to 5 minutes, until you smell a nice aroma & the semolina becomes crispy.
  2. In a heavy bottom Pan, add water sugar, elachi powder, salt & bring this to a boil. Reduce the flame to medium. While the water is boiling, add the color & dry roasted semolina slowly while continuously stirring. The semolina will start to bubble but keep stirring.
  3. Now cover a lid & allow the semolina to cook for 2- 3 minutes on low flame. Now give it a good mix with a spoon. By this time the semolina will be fully cooked.
  4. Finally add in the Ghee into the semolina & give a good mix. Cover the lid & continue to simmer for another minute. Turn of the flame & let Kesari Bath rest in the pan for 5 to 10 minutes. Garnish the Kesari Bath with chopped nuts & its ready to serve.

Coriander Adai



Yesterday I was just thinking on what to make for Breakfast. Suddenly I happened to see a post from my fellow Blogging Marathoner "Srivalli" Her Dosa recipe was very inviting & totally new to me. I was curious to know more about it & wanted to make it for Breakfast this morning. The best part of this recipe is that its a instant dosa. There is absolutely no much waiting time like the regular dosa. The Dosa came out perfect & it was very delicious. My hubby was  non verbal praises about this dosa. Nonverbal! yes, coz he was in a conference call this morning & I served his breakfast in his office room. This is definitely a keep & share recipe. Makes around 10 Dosas

Ingredients:
  • 1 cup Dosa Rice
  • 1/4 cup Urad Dal
  • 1/4 Cup Toor Dal
  • 1/4 Cup Channa Dal
  • 1/2 tspn Methi seeds
  • 1 Tspn minced Ginger
  • Handful of coriander leaves
  • salt as per taste
  • Ghee for garnishing
  • 1/2 cup water
Method:
  1. Wash all the lentils (Dal) & rice. Soak this for minimum of 2 hours or overnight
  2. Grind the soaked lentil rice along with chopped coriander leaves, ginger & water to a dosa consistency batter
  3. Heat the flat non stick Pan (Tawa) spread a ladle full of batter on the heated pan & cook for a minute or until done. Garnish the dosas with few drops of ghee. The dosa is ready.
Note:
  • In Vallis original recipe she has added green chilis & navratna dal. I skipped chilis coz I wanted to feed my lill boy.
  • Since I dint have navaratna dal I skipped this.
  • I like my dosas thin & crisp hence I have made thin ones. You can make thicker dosas & flip of both sides while cooking.
I had these Dosas with some Curry leaf Chutney.

Spongy Dosa

When you really don’t have time to soak rice or you have forgotten to soak & suddenly remembered it at night, than this is a safe recipe option to make Dosa’s. I tried these Spongy dosas & it came out really nice & soft. Thx to Yummy Tummy for sharing this recipe.  Here is the recipe
 
Ingredients
  • 1 Big cup of Rice
  • ½ cup of Beaten Rice/ Poah/Avalakki/Aval
  • ¼ Tsp of Baking Soda
  • Salt as per taste

Method: Soak rice & beaten rice overnight. In the morning grind it to a smooth batter & add in the baking soda, salt. Leave this for about 1 to 2 hours. Now in a Non-stick Dosa Pan, pour in 1 laddle full of batter & just twist the Tava for the batter to spread evenly. Cover the pan with a lid for 30 secs & Cook this on low flame.
 
Note:
  • No oil is required to make this Dosa
  • Cooking it on low flame makes it very soft & white
  • Twisting the Pan will make this Dosa thinner & big
