Coconut Muffins




  • 1 cup shredded coconut
  • 2 cups flour
  • 150 gms Butter
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 tablespoon baking powder
  • In a medium bowl, mix together flour, baking powder, sugar, and salt. In a small bowl, combine together egg, milk and butter. Add to dry mixture (flour, baking powder, sugar, salt) and until moistened. Add shredded coconut.
    Preheat the oven (350 degrees) and spoon batter into lightly greased muffin tin, filling each cup 2/3 full. Bake for approx. 15-20 minutes, or until golden brown. Remove from oven, and allow to cool.
