Well this is my 9th cake order. I made this Minnie Mouse cake for my friends daughters Birthday last week. Its a chocolate cake with chocolate Buttercream icing. In total the cake weighed around 8kgs. 40% of the weight comes from the fondant & decorations. I have used fondant, gumpaste & sugar beads for the decoration. Everything that you see on this cake is edible. This cake serves around 50- 75 people. I will be sharing just the chocolate cake & its frosting recipe here.
Ingredients
- 2 cups sugar
- 1-3/4 cups all-purpose flour
- 3/4 cup HERSHEY'S Cocoa
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cupmilk
- 1/2 cuo Butter
- 2 teaspoons vanilla extract
- 1 cup boiling water
Method: Heat oven to 350°F. Grease and flour 9-inch round baking pan. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, butter and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pan & bake for 45 to 55 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Now cut the cake into 3 layers & frost with chocolate Butter cream.
Chocolate Buttercream Recipe
Ingredients
- 250 gms butter (room temperature)
- 500 gms Icing sugar
- 250 gms Chocolate chips (Melted on double boiler)
- 1 Tsp Lime Juice
- 1 Tbsp Vanilla essence
- 1//4 Tsp Salt
- 2 to 4 tbspMilk (optional to get the desired consistancy)
Method:
Beat butter to a smooth consistancy, Stir in melted chocolate. Alternately add powdered sugar & rest of the ingredients beating to spreading consistency. Now the frosting is ready. spread this to each layer of cake.
Note: To make the cake really juicy & moist ,I add in sugar syrup on each layer of the cake before frosting.
